Something between a drink and a pudding, popular from Elizabethan to Victorian times and still made occasionally. The essential ingredients are alcohol and milk or cream. In its simplest form it was a rustic treat; a dairymaid milked the cow into a bowl of spiced cider or ale, providing her sophisticated visitors with some warm alcoholic curds and whey. The version made today also goes back to at least the 17C, blending cream and wine with spices and whisking the mixture to a light froth.
