It was discovered in the mid-19C that bread could be made to rise with bubbles of carbon dioxide instead of yeast. Baking powders became available made of two ingredients (bicarbonate of soda, cream of tartar) which would release the bubbles when in contact with water. Soda bread became a general term, but it is used most often of the wholemeal variety associated with Ireland.
