(18C) The most influential cookery writer in English before the arrival of Mrs Beeton, though nothing is known of her beyond what can be deduced from her books. The Art of Cookery Made Plain and Easy (1747) went through many editions, amply justifying the bold claim on its original title page that it 'far exceeds any Thing of the kind ever yet Published'. Mrs Glasse is widely believed to have begun a recipe with the words 'First catch your hare'. In fact this is an old proverb; the nearest she comes to it is the instruction 'Take your hare when it is cased'.
