Characteristically English design of kiln for the drying of hops (an essential ingredient in the flavour of beer), and a picturesque feature in the landscape of *Kent and neighbouring counties. An oast house is a brick building, either round or square, with a tapering roof leading up to an inclined wooden cowl which can be swivelled to improve the flow of air. The hops are laid on a slatted floor and are dried by a heated draught passing through them.
